It’s grilling season! Everything tastes better when you can eat outside, or at least have the flavors of outside when you are inside.
I’ve got a great, all-purpose marinade for you that works on almost anything you’d want to grill, whether you grill it outside, inside on a grill pan, or under your oven’s broiler.
This marinade is your secret weapon for flavor. It’s got a touch of sweetness, a little acid, and savory flavor from mustard without being overpowering. It’s simple enough that you’ve probably already got all of the ingredients on hand, and you can remember it without digging out a recipe.
Ingredients you'll need:
¼ cup mustard (I like Dijon or grainy, but they’ll all work!)
¼ cup honey
2 tablespoons lemon juice
2 tablespoons olive oil
½ half teaspoon each kosher salt and pepper
Just whisk it up and slather it on! I marinate my grill items for 20 minutes or up to an hour, no need to do an overnight soak. I also remove any excess surface marinade that might stick on the grill by lightly wiping the food with my fingers. You can save a bit off to the side to brush on as you grill if you want.
The fun part of this is you can flavor the marinade with additional spices if you want to change it up. Garlic (fresh or powdered), cumin, and chili flakes are all great.
I use this on chicken breasts, portobello mushrooms, pork tenderloin, asparagus, and even Brussels sprouts. You can also thick slice onions and brush it on as they soften and roast on the grill, yum!
