Recipe: Roasted Butternut Squash Soup
1 medium butternut squash, peeled and diced
1 onion, chopped
2 carrots, peeled and chopped
2 cloves garlic, minced
4 cups vegetable broth
1 tsp dried thyme
1/2 tsp ground nutmeg
Salt and pepper to taste
Preheat the oven to 400°F (200°C).
Toss the diced butternut squash with olive oil, salt, and pepper. Roast on a baking sheet until tender and slightly caramelized, about 25-30 minutes.
In a large pot, heat some olive oil. Add the chopped onion, carrots, and garlic. Sauté until softened.
Add the roasted butternut squash to the pot. Pour in the vegetable broth and bring to a simmer.
Use an immersion blender to puree the soup until smooth. If using a regular blender, allow the mixture to cool slightly before blending.
Season with dried thyme, ground nutmeg, salt, and pepper. Let the flavors meld for a few minutes.
Serve the soup hot, garnished with a drizzle of olive oil and a sprinkle of nutmeg.
