Your Chef instructor will not be cooking alongside you, rather your Chef is 100% focused on you, sharing instructions, tips and tricks personalized just for you. YOUR CLASS MENU: Raspberries + Cream Éclairs INGREDIENTS YOU'LL NEED: Serving Size: 12-14 éclairs, adjust for what you need Raspberries + Cream Éclairs: FOR THE RASPBERRY CREAM: 1 tablespoon cold water 1 teaspoon gelatin 1 ½ cups/180 grams fresh raspberries 8 ounces/225 grams cream cheese, at room temperature 3 tablespoons honey 2 tablespoons confectioners’ sugar 1 ½ teaspoon vanilla extract ½ cup/10 grams freeze-dried raspberries, ground to a fine powder in a spice grinder - can be omitted for a less intense raspberry flavor cream ¾ cup/175 milliliters heavy cream FOR THE PUFFS: 6 tablespoons/170 grams unsalted butter (3/4 stick) 2 teaspoons granulated sugar ½ teaspoon kosher salt ¾ cup/95 grams all-purpose flour 3 large eggs FOR THE GLAZE: 1 cup/120 grams fresh raspberries 2 cups/245 grams confectioners’ sugar ¾ teaspoon vanilla extract Pinch of kosher salt EQUIPMENT YOU'LL NEED: small bowl large bowl small saucepan plastic wrap medium saucepan wooden spoon Oven piping bag fitted with a large round or star tip two baking sheets parchment paper Toothpick wire rack fine-mesh sieve Whisk pastry bag fitted with a large fluted tip

To reschedule a class, send an email to info@festcooking.com 24 or more hours before your scheduled class time. For all reschedule requests 24 or more house before class time, we will cancel your scheduled class and provide you a credit to apply on a new booking. Do note, class prices may vary from the time of your original booking to a new booking, we cannot honor a class price. All classes are final sale, no refunds will be issued if the class needs to be cancelled. There are no exceptions to our policy.
